Since I’m participating in the Preparedness Pro’s Food Challenge, I have 2 weeks worth of meals planned. We should do fine during the 2 week challenge, though I’m not certain if the eggs will hold out or not. Therefore the breakfasts center around other foods. If it turns out that we have plenty of eggs, I’ll tweak this a bit next week. The side dishes may also vary based on what we have that needs picked in the garden. We also have lots of dehydrated fruit and frozen fruit for snacks or desserts. The meals are heavy on the meat. I planned them so that I could take the meat out the night before from the freezer. We may end up eating more vegetarian meals than were planned, though, as I do not usually use as much meat in the summer.
Part of the challenge is to not run out and buy a lot of extra supplies to get you through the 2 weeks. I didn’t order any more milk than I normally would have during this time span. We have about 20 eggs we have on hand from a local farmer, and I didn’t buy any extras from the store. I can make our own bread, and so I didn’t buy any extra sandwich bread for my hubby’s work lunches.
We’ll see how it goes!
