Hello everyone! I’m hoping you all are doing well this Monday morning. Did you know that I’m one of those kooky people that love Mondays? It is my most productive day of the week. It always feels like a fresh start, full of opportunities. Here’s hoping that your Monday and week is a blessed one!
Breakfasts—cereals, soaked oatmeal, egg toast, omelets
Lunches—sandwiches, leftovers, soups, and mac and cheese
Suppers
Monday—Pasta with vegetables from the garden and CSA (squash, leeks, garlic, cherry tomatoes, basil, green beans, and peppers)
Tuesday—Venison Tenderloin on the grill, potatoes, green beans, and sautéed pears
Wednesday—Making supper for the kids at church. This week I’ll be making chicken, mashed potatoes, peas, and corn
Thursday—I’ll be having a Mother’s Blessing at our home. Among the items for dinner I’m planning butternut squash soup and almond and honey whole wheat cookies. I might also make some quesadillas for the hubby and daughter.
Friday—Stuffed peppers using lamb, cooked carrots
Saturday—Vegetable meal with foods from the CSA
Sunday—Chicken Paillards and salad
