Tip of the day

When whole chickens are on sale, they are usually a better price then purchasing cut up pieces.  Baking a whole chicken can take a while and can become dry if not cooked properly. I remedy this problem by cutting the chicken into quarters or pieces.  The process takes only a few minutes and is pretty easy with know-how and a sharp boning knife. 

Knowing how to cut a chicken into pieces is a cooking skill that all too few know these days.  I found this great tutorial on sectioning and piecing a chicken. I hope you’ll view the photos and give it a try the next time you snag a good deal on whole chickens.
