Tip of the day

Avoid making candies, divinity, or meringues in wet weather.   I’ve heard that both the moisture in the air and the barometric pressure will throw the process off.  I made a meringue buttercream on Friday in the rain, but because the meringue was made into a frosting, it didn’t have to hold its peak.  When I’ve made divinity and pralines in wet weather, though, they do not hold their shape and tend to run.
