Tip of the day

Do onions make you cry?  If so, here are some tips to help:

  • Wear glasses.  If I know I’ll be chopping onions for a while, I will put on a pair of sunglasses.  Our daughter always laughs at me—“Momma, it isn’t sunny in the house!”
  • Breathe through your mouth.  Some people say to put a piece of bread in your mouth or hold a match between your teeth.  The thought behind this is to breath from your mouth instead of from your nose.
  • Sit down when chopping instead of leaning over the onion.  Again, the point is to reduce the risk of the fumes getting into your eyes.
  • Soak the onions in water.  This helps to rinse some of the onion juice away.  For people who like less pungent onions, this is a good tip to know.
  • Leave the root end intact and compost it.  The root end contains more of the chemicals that cause you to cry.  It is also a little tougher, and many chefs will discard it for this reason.
