Honey Whole Wheat Cookies

Want a good recipe to use with homemade strawberry jam?  This one is for you!DSC_1482I adapted this recipe from one I found in Good Housekeeping that Meryl Streep had submitted.  It is a wholesome alternative to sugary treats. 


3 sticks of butter, softened

3/4 c. honey

1 1/2 t. vanilla extract

2/3 cups almonds

1 3/4 cups whole wheat flour (if using freshly milled use, hard red)

1 3/4 cups white whole wheat flour (You can find this under the King Arthur brand.  If you cannot find it, use regular all purpose white flour.  If using freshly milled, use soft white)

Jam (I used peach and strawberry)

  1. In a dry cast iron skillet, toast the almonds, making sure not to burn them.  Add the toasted nuts to a food processor and pulse until they are completely ground into a mealy nut flour.
  2. Cream the butter, honey, and vanilla.
  3. Add the flours and ground almonds. 
  4. Divide the mixture into 4 and cover with plastic wrap.  Refrigerate at least 2 hour.
  5. Flour your board or counter top and roll the dough to 1/8-1/4 inch thickness.  Bring out only one portion of the separated dough at a time and return any cutting scraps to the refrigerator to cool.  Cut in whatever pattern you prefer.  I like hearts.
  6. Place the cookies on a parchment paper lined baking sheet.
  7. Gently use your thumb to make an indentation in the cookie.  Add the jam of your choice to the well. 
  8. Bake 12-15 minutes, or until golden brown.  Let them sit in the pan for 2 minutes before removing to a cooling rack.

IMPORTANT!!!!  DO NOT EAT RIGHT AWAY!!!  The jam will be very, very hot and can easily burn your mouth.  Wait a few minutes for them to cool before you eat them. 

These cookies will not be ultra sweet.  They are more like a shortbread cookie.  If you are looking for alternatives to refined sugars and want to make your family’s treats a little healthier, though, these are a great option.
