Tip of the day

As many of you who’ve been reading this week know, tonight is the Ladies Night Out event at Faith UMC.  I have taken the lead in organizing the event, and I’ve been busy this week with last minute details and tweaks.  I’m looking forward to a fun and relaxing evening tonight, and I really hope you’ll join us!

When things get busy, I find that I’m even worse about taking care of myself than usual.  Below are a few tricks that I’ve learned from busy weeks:

  • Take time to breathe.  At least 5 times per day, focus on your breath.  Take slow and deep breaths in through your nose and out through your mouth.  It calms your body and helps to lower your blood pressure and stress response.
  • Take time for yourself.  Yesterday my body was so tired, and it would have been very easy to opt out of my afternoon yoga class.  Yet, it was exactly what I needed.  I think I yawned through the first half of it, but as we began our standing poses my body started to wake up.  After the class I was more centered, relaxed, and energized.  Sounds like a contradiction to be relaxed and energized, right?  It isn’t.  My muscles were less tense, my thoughts were more positive, and my body was ready for the rest of the afternoon. 
  • Take some snacks with you.  Isn’t it funny how mothers will make sure their children eat healthy meals, get plenty of rest, and have exercise, but we don’t really model that behavior very well?  Yesterday, I left the house without having breakfast.  Luckily I had picked up a couple of Luna bars from Kroger (free after coupons).  Having one of those in my purse kept me from running through a fast food drive through for “nourishment”.   I ran back to the house before yoga and grabbed a baggie of grapes that I had prepped and ready.  It was a perfect, healthy snack.
  • Slow down to hurry up.  When you are in a rush to complete a task, you’re much more likely to make mistakes.  Sometimes the best thing that you can do is stop what you are doing, take a breath of fresh air outside, and then go back to the task with more focus. 
  • Don’t do it alone.  The art of delegating is a necessity to surviving a role as a leader.  Learn to ask for help when needed, and even more than that, let people help when they want.  Just because someone is doing something differently than you had planned, it doesn’t mean that it is wrong.  The time to delegate is at the beginning of the planning process.  Luckily, we have a great team of volunteers at our church, and the women and men helping with the event tonight have been awesome on every level.
  • Access your social supports.  When focused on one task, it is easy to "put your blinders on”.  Calling a friend to chat, getting together for a cup of tea, or enjoying a walk on a nice afternoon are all ways to connect. 
  • Take time for prayer and meditation.  You’ll be more centered, more positive, and more motivated than before.

Tip of the day

It is the end of the month, don’t forget to print your coupons!  Coupon sites often refresh coupons at the first of the month.  If there are some you want to be sure to snag, print them before it is too late.

Tip of the day—tea

From the feedback that I’d received from some readers, you like the tips of the day enough to keep them coming.  Thanks for all of you who took the time to leave a comment or e-mail me.  It is always good to hear what you like and want more of for this blog.  I have so enjoyed getting to know some of the readers, and I appreciate you more than you’ll ever know!

Today’s tip was one that I was reminded of when last in Knoxville’s little gem Tea at the Gallery.  A friend and I had enjoyed a pot of tea together, and the waitress asked if we would like some hot water to steep some more tea.  When you have high quality loose leaf tea, you can usually make more than one pot of tea with the leaves.  I recommend steeping the second pot for longer and using a little less water than the first pot.  You’ll get two pots for the price of one this way!

When you are done with tea bags or tea leaves, make sure to gently squeeze them to release the rest of the tea.  Tea leaves will soak up a lot of liquid, and if you don’t do this, you are wasting all of that brewed tea.

To discard leaves and bags, save them for your compost pile.  They are great for your soil!

Ladies Night Out THIS WEEK!

New ImageBack by popular demand, Faith UMC presents Ladies Night Out on Thursday, September 30th from 6-8pm. Last year the event was a huge success. Women were able to fellowship, enjoy some delicious refreshments, relax with some pampering, and get a jumpstart on their holiday shopping.

Vendors are donating a portion of their revenue for the evening to Faith United Methodist Church. Everyone is welcome, and we hope you will bring friends and family for a “girls night”. Admission is FREE and there will be chances to win plenty of door prizes!

I receive her email newsletter and have been salivating over some of the dessert options. I bought a few of her products last year, and they were so handy to have available when I needed a quick appetizer.

Icing on the Cake—Lori’s specialty cakes are a huge hit at any birthday party or special event. She is making one of her fantastic creations for the refreshment table this year. YUMMMMMY!

La Selva MedSpa—I am thrilled that they will be coming! They were a HUGE hit last year, and they are trying to secure two massage therapists this year.

Mary Kay—I love this company for how they empower women! The Satin Hands gift set makes a wonderful gift.

Miche Bags--These bags are the "perfect solution for women on the go". You've seen these advertised on TV, and now you'll get to check them out in person.

Pampered Chef—If you do not get any other item from Pampered Chef, I recommend their trifle bowl as a must have. I use trifle dishes for a lot of recipes, and I was always so frustrated with how I had to store them. The Pampered Chef trifle has a pedestal that fits inside of the bowl AND a lid for easy storage.

Premier Designs Jewelry—The jewelry on their website is amazing. Since last year’s event I’ve become a Premier addict! I have many of their pieces, and I receive compliments on them all of the time.

Salon Mira Mira—I went to this salon last year to get my hair trimmed. What a wonderful experience! They didn’t even fuss at me for going so long in between hair cuts! They were happy that I was growing my hair out for Locks of Love and gave me some pointers and tips to help with the process. They will be doing nail painting at the event.

Stella & Dot—If you’ve read a magazine or watched entertainment TV shows in the last year, you’ve seen their jewelry. Super fashionable and feminine, we are very happy to have a Stella and Dot rep joining us this year! I have already spotted a few necklaces that I want to buy!

Suzan’s Bows—One of our church members will be making custom hair bows at the show! You should see some of the bows that she has made for her little girls—soooo cute!

Thirty-One—Check out the bags on their website! Their newest catalog has some great designs. I plan to pick up, among other things, a new purse for me and a bib for my nephew.

Tupperware—My favorite item in the catalog is their sandwich keeper. We have been impressed with how well the ones we have had held up over the years.

Uppercase Living—Does that wall space in your kitchen need a little pizzazz? Check out the Uppercase Living catalog to get the designer look for a lot less. A few of our church members ordered wall decor through them last year and they have been very pleased. View some of their designs at one of our church member’s stores—The Fishing Place, located in Halls in the Kmart shopping center.

Usborne Books—I hosted a book party a year ago, and I received enough free books for most of my young relatives for the holidays. We love their Spanish DVD, and my nephews went on and on about how cool the dinosaur books were.

Meal Planning

This meal plan is for 2 adults and 1 child and the occasional guest to dine with us.  NOTE—I often make enough food to freeze or have for another meal.  Because of this, leftovers are counted as $0 on the menu.

My best tip for meal planning is to do what works for you.  For me, having a plan, even if I don’t follow it fully helps me to make sure we have food on the table.  I try to plan based on what we have in the garden, what is fresh from the farmers market, what needs using in the pantry/fridge/freezer, and what we have time to make when things are busy. 

Monday

Tonight will be a busy night, so I’m going to keep it easy.

Tip of the day

Once a month check your food stores.  This not only helps to prevent spoilage and waste, but it also helps you to keep better tabs on what you have on stock to use for meals.

  • Check your freezer.  Discard what is freezer burned or what might be beyond use.  Give it a good wipe down and refresh the baking soda box.
  • Look in your fridge.  Use any leftovers, the last of the olives, that last teaspoon of jelly, anything that might need eating to make way for fresh foods.  Give everything a good wipe down and replace the baking soda box in there.  Check the temperature and make sure it is at the proper level.  Vacuum the coils so that it is running properly.
  • What do you have in dry storage?  Onions starting to sprout?  Chop them and put them in a bag in the freezer.  This will help to streamline your prep work for supper on busy nights.  Potatoes starting to sprout?  Consider planting them this year as part of your garden.  Garlic getting tough?  Roast or dehydrate it so that you can use it before it goes bad. 
  • What about your pantry?  Organize.  I like to put the cans so that I can see the labels, because I’m anal because I like to see what is available with a quick scan.  Make a habit of putting the new cans and jars in the back so that you can use them in a first in first out method.  Check any food that you have preserved at home for spoilage and discard what is unsafe to use. 
  • Check your spices.  If you can’t smell them, then they are probably too old to use.  Most spices do best if stored for 1-2 years. 
  • Plan a meal or two using the odds and ends that you found in your kitchen quest.

Shepherd’s Pie

DSC_1835This is a repost from last year, but since we just picked up our lamb order for the year, I’ve had lamb recipes on my mind.

This photo does not do justice to how wonderful Shepherd’s Pie really is!  I hope you’ll try it.  If you do not like the sweetness of lamb, you can make a cottage pie instead by using ground beef instead of ground lamb.

Ingredients

1 onion chopped

2 cloves garlic minced, more if desired

2-3 carrots chopped

1 lb ground lamb

Prepared mashed potatoes, these can be leftovers or freshly made

1T or more butter

1 cup frozen peas, more if desired

1 can cream of mushroom soup (If you prefer to not use canned soups, you can make a white sauce.  See below for directions on doing so).

In a heavy skillet, brown the lamb with the onions, garlic and carrots in either butter or a little oil.  Season the mixture either with salt and pepper or Tony’s.  (I prefer Tony’s).  Drain the mixture if desired once the lamb is browned fully.  Remove from heat and stir in the can of cream of mushroom soup.  In a buttered casserole dish, add the meat and soup mixture.  Top with a layer of peas.  Top that layer with mashed potatoes.  Dot the top with a bit of butter.  Heat in the oven at 350 degrees until the top is a golden brown.

White sauce, if you prefer to not use the canned cream of mushroom soup.

In a saucepan over medium heat, whisk 2 T. butter and 2 T. all purpose flour together to make a blond roux.  Add 1 cup of whole milk or cream, whisking as the milk is added to the roux.  Cook on medium low heat, whisking constantly, until the mixture is thickened.  If you would like to add mushrooms, do so.  Otherwise add the mixture to the meat and vegetable mixture.
