I mentioned this granola recipe in my tip of the day. Sorry that there isn’t a photo for you, but I’ll try to update this post when I make it next.
3 c old fashioned oats
1 c slivered almonds
1 c shredded coconut
½ c packed brown sugar
½ c honey (buckwheat honey tasted the best)
½ c canola oil
¾ t salt
around 1/2 -1 c each golden raisins, dried cranberries, and chopped dried apricots or your choice of dried fruits
Preheat oven to 250 degrees F.
In a large bowl, combine ingredients. Pour onto a greased jelly roll pan. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color. Take out of oven and leave in pan for at least 20 minutes if you want some clumps of granola—otherwise take out of pan immediately. Cool and then add dried fruit.
Stores for at least a few weeks at room temp.
Serving suggestion—serve with homemade vanilla flavored yogurt for a nice treat or for breakfast.
