Day 17—Challenge Update

Today was an absolutely gorgeous day.  We opened some of the windows in the house and let the fresh air in.  Daughter and I ran some errands.  We picked up milk, shopped at Three Rivers Market, stopped back at home for lunch, worked at the church getting ready for The Second Annual Knoxville Coupon Fair and she rode her bike and played outside.  I can’t believe that the coupon fair is only a little more than a week away!

Breakfast—Cereal and milk, and hot tea for me

Lunch—Hubby had his lunch that he had packed yesterday but didn’t eat.  Daughter had a PBJ sandwich, pickled beets, and cheese.  I had salad with beets, boiled egg, leftover lamb, and cheese with oil and vinegar as the dressing.

Supper—I made homemade chicken noodle soup using the chicken we had “bought” for free at Earth Fare

What did I learn today?

We are finally starting to make some progress on whittling away at foods.  Today I cleaned out the fridge, and I was pleased to use up a few of the jars and see fewer foods going to waste.
